Aji Amarillo Chicken Salad — Not Your Average Deli Sandwich

Chicken salad has a reputation problem. It's the lunch people eat when they can't think of anything else, made with leftover rotisserie and whatever's in the fridge. It's fine. It's never exciting.

Adding aji amarillo changes the premise entirely. The pepper's fruity, warm heat cuts through the richness of the mayo, adds a brightness that makes you pay attention, and turns what was a forgettable lunch into something you'd actually plan for. Same chicken. Completely different experience.

Aji Amarillo Chicken Salad Recipe

Ingredients

  • 3 cups cooked chicken, shredded or diced (rotisserie works perfectly)
  • 3 tablespoons mayonnaise
  • 2 tablespoons Aji Amarillo sauce
  • 1 tablespoon lime juice
  • 2 celery stalks, finely diced
  • ¼ red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper to taste
  • ¼ cup toasted pepitas or slivered almonds (optional, for crunch)

Instructions

  1. Combine the dressing. Whisk together mayo, aji amarillo, and lime juice until smooth. Taste — it should be creamy with clear heat from the pepper and brightness from the lime.
  2. Mix the salad. In a large bowl, combine chicken, celery, red onion, and cilantro. Add the dressing and toss to coat everything evenly.
  3. Season. Add salt and pepper to taste. Fold in pepitas if using.
  4. Chill 15 minutes if you have time. The flavors come together beautifully cold.

How to Serve It

  • Classic sandwich: On toasted sourdough or a croissant with lettuce and tomato
  • Lettuce wraps: Spoon into butter lettuce leaves for a low-carb, gluten-free option
  • Over greens: Served as a salad over arugula with a drizzle of aji amarillo vinaigrette
  • Stuffed avocado: Halve an avocado, remove the pit, fill with chicken salad. The richness of the avocado with the heat of the amarillo is a strong combination.
  • With crackers: As a snack or appetizer platter
