Aji Verde Creamy Dipping Sauce — For Wings, Fries & Whatever’s in Your Fridge
Every kitchen needs a go-to dipping sauce. Something that works with wings, fries, crudites, quesadillas, chips, leftover roasted vegetables — whatever you pull out of the fridge at 10pm. This is that sauce.
Aji verde is already creamy and herbaceous on its own. Combined with mayo and a squeeze of lime, it becomes a dipping sauce that's in a different category than ranch or blue cheese. It has actual flavor. It makes things taste better rather than just providing fat and cool.
Aji Verde Creamy Dipping Sauce Recipe
Makes: about 1 cup
Time: 5 minutes
Difficulty: Easy
Ingredients
- 3 tablespoons Aji Verde sauce
- ½ cup mayonnaise
- 2 tablespoons sour cream (or Greek yogurt)
- 1 tablespoon lime juice
- 1 small garlic clove, grated
- ½ teaspoon salt
- 1 tablespoon water to thin, if needed
Instructions
- Combine everything in a bowl and whisk until smooth. Taste — adjust lime for brightness, salt as needed, add more verde if you want a stronger pepper flavor.
- Chill 15 minutes if you have time. The flavors come together better cold.
- Serve with whatever needs dipping. It holds in the fridge for up to 5 days.

- Buffalo wings or grilled chicken wings
- French fries, sweet potato fries, or tater tots
- Crudites (cucumber, carrots, bell pepper, celery)
- Grilled or roasted shrimp
- Quesadillas, tacos, or empanadas
- Crusty bread

The Verde Advantage Over Ranch
Ranch is buttermilk and herbs. It's mild by design. Verde creamy dipping sauce has the same creamy base but brings aji verde pepper, cilantro, and garlic into the equation. It's cooling and bright at the same time. The pepper adds warmth without overwhelming the sauce's function as a complement.
It also works as a sandwich spread, a taco topping, and a dressing for grain bowls if you thin it slightly with water or lime juice. One sauce, many jobs.
