Aji Rojo Skirt Steak Tacos with Pickled Red Onion
Skirt steak tacos are already one of the best things you can put on a grill. Aji rojo makes them the best thing anyone at your cookout has ever eaten.
Rojo — made from rocoto pepper, Peru's fiercest native chile — has the kind of heat that doesn't announce itself politely. It builds. It lingers. And on skirt steak, which has the fat marbling and grain structure to hold up to bold flavors, it's exactly what the taco needs.
The pickled red onion does two things: cuts the richness of the beef and adds a brightness that balances the rojo. Make the onions the night before if you can. They're better that way. It's the same quick-pickle logic behind Peru's salsa criolla — salt and acid softening raw onion into something bright and crisp, just with sugar and vinegar standing in for lime.
Aji Rojo Skirt Steak Tacos Recipe
Serves: 4
Time: 30 minutes active, 1 hour marinating
Difficulty: Easy
For the Steak
- 1.5 lbs skirt steak
- 3 tablespoons Aji Rojo sauce
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1 teaspoon cumin
For the Pickled Red Onion
- 1 large red onion, thinly sliced into half-moons
- ¾ cup apple cider vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- ½ cup warm water
To Serve
- 8 small corn tortillas, warmed
- Fresh cilantro
- Lime wedges
- Additional Aji Rojo sauce for drizzling
- Cotija cheese (optional)
Instructions
- Make the pickled onions. Combine vinegar, sugar, salt, and warm water. Stir until dissolved. Add onion slices and let sit at least 30 minutes (overnight is better). They'll turn bright pink and mellow significantly.
- Marinate the steak. Combine rojo, olive oil, garlic, lime juice, salt, and cumin. Coat the skirt steak well. Let marinate at least 1 hour, up to overnight in the fridge.
- Grill hot and fast. Skirt steak needs high heat and speed. Get your grill as hot as it will go. Cook 3–4 minutes per side for medium-rare. Don't fuss with it — let the grill do the work.
- Rest before cutting. Let the steak rest 5 minutes. This matters. Cut against the grain into thin strips.
- Build the tacos. Warm tortillas directly on the grill for 30 seconds per side. Layer steak, pickled onion, cilantro. Drizzle with additional rojo if you want more heat. Serve with lime.
The Rojo Advantage
Most taco marinades rely on chili powder and cumin for heat and depth. Rojo delivers both, plus the fruitiness of rocoto that chili powder can't touch. The fermented, complex heat of the sauce penetrates the meat during marination and caramelizes on the outside during grilling. You get heat, char, and depth in every bite.
Tips
- Cut against the grain or skirt steak becomes chewy. The grain runs lengthwise — cut perpendicular to it.
- Don't skip the rest. Five minutes makes the difference between juicy and dry.
- Corn tortillas only. Flour tortillas don't have the structure or flavor for this.
