Aji Verde Greek Yogurt Sauce — The Creamy Peruvian Topper for Fish & Chicken

When Peru meets the Mediterranean, your fish and chicken get a lot more interesting.

Aji verde already has the herby, garlicky depth that makes Greek yogurt sauces work. Fold them together and you get something that's cooling and spicy at the same time — the yogurt tames the pepper's heat just enough to make it approachable, while the verde lifts the yogurt out of the plain, tangy territory it usually occupies.

It's high in protein, lower in fat than mayo-based sauces, and takes 3 minutes. Spoon it over baked salmon, grilled chicken thighs, roasted vegetables, or anything that needs a bright, creamy finish.

Aji Verde Greek Yogurt Sauce Recipe

Makes: about 1 cup | Time: 3 minutes | Difficulty: Easy

Ingredients

  • ¾ cup plain full-fat Greek yogurt
  • 3 tablespoons Aji Verde sauce
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 1 small garlic clove, grated
  • 2 tablespoons fresh cilantro, finely chopped
  • ½ teaspoon salt
  • 1–2 tablespoons water to thin, if needed

Instructions

  1. Combine yogurt, verde, olive oil, lime juice, garlic, cilantro, and salt. Whisk until smooth.
  2. Taste and adjust — more verde for heat and herb, more lime for brightness, pinch more salt if flat.
  3. Thin with water or additional lime juice to reach your preferred consistency. Thicker for a topping, thinner for a drizzle or dressing.
  4. Serve immediately or refrigerate up to 4 days.

What to Serve It With

  • Baked or grilled salmon — spoon over the top right before serving
  • Grilled chicken thighs or breasts — use as a sauce or dipping accompaniment
  • Roasted vegetables — especially cauliflower, zucchini, or sweet potato
  • Fish tacos — thin slightly and drizzle over assembled tacos
  • Grain bowls — as a creamy dressing over quinoa or farro
  • Crudites and pita — serve as a dip at room temperature

The Health Angle

Greek yogurt brings approximately 10 grams of protein per serving to the sauce without adding significant fat. Combined with aji verde's capsaicin (which research suggests may support metabolism) and the anti-inflammatory properties of garlic, this is a sauce you can feel good about using generously.

It's also gluten-free, low-carb, and works within most dietary frameworks. Which is nice, but honestly secondary to the fact that it just tastes great.

Variations

  • Richer: Substitute half the yogurt with sour cream or labneh
  • More heat: Add a teaspoon of rojo alongside the verde
  • Herb forward: Double the cilantro and add fresh mint
