Aji Verde Roasted Cauliflower with Toasted Pepitas

Cauliflower has a problem: left to its own devices, it's bland. It needs fat, heat, and something with actual flavor to become what it's capable of. Aji verde is all three of those things in one jar.

Roasted at high heat with a coating of verde, cauliflower caramelizes at the edges, picks up the herb and pepper flavors, and becomes something that plant skeptics eat seconds of. The toasted pepitas add crunch and a nutty richness that rounds out the whole dish.

Aji Verde Roasted Cauliflower Recipe

Serves: 4 as a side | Time: 35 minutes | Difficulty: Easy

Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tablespoons Aji Verde sauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cumin
  • ¼ cup pepitas (pumpkin seeds)
  • Juice of ½ lime
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 425°F. High heat is what creates the caramelization — don't go lower.
  2. Toss the cauliflower. Combine verde, olive oil, salt, pepper, and cumin. Toss cauliflower florets thoroughly to coat. Spread in a single layer on a baking sheet — don't crowd.
  3. Roast 25–28 minutes, flipping once halfway through, until deeply golden and caramelized at the edges.
  4. Toast the pepitas. In the last 5 minutes of roasting, push cauliflower to the sides and scatter pepitas in the center. They toast fast — watch them.
  5. Finish. Remove from oven. Squeeze lime juice over the top. Toss everything together. Garnish with cilantro.

Why This Works

Verde's cilantro and garlic caramelize against the cauliflower's natural sugars at high heat, creating a crust that plain olive oil never could. The pepper adds warmth that develops as you eat rather than hitting upfront. The result tastes complex despite being five ingredients and one sheet pan.
