Aji Verde Grilled Salmon with Herb Drizzle
Salmon on the grill is easy to get wrong. Too long and it dries out. Not enough flavor and it's just fish. The solution to both problems is aji verde.
Verde — our green Peruvian sauce built on cilantro, garlic, and aji verde pepper — doubles as both marinade and finishing drizzle. As a marinade, it creates a herb crust that insulates the fish and keeps it from sticking. As a drizzle at the end, it adds freshness that cuts through the richness of the salmon. You're using the same sauce twice, and it's doing two completely different jobs.
Aji Verde Grilled Salmon Recipe
Serves: 4
Time: 25 minutes (plus 30 min marinating)

Ingredients
- 4 salmon fillets (6 oz each), skin on
- 4 tablespoons Aji Verde sauce, divided
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon salt
- ½ teaspoon black pepper
- Fresh cilantro and lime wedges for serving
Instructions
- Marinate. Combine 2 tablespoons verde, olive oil, lime juice, salt, and pepper. Coat salmon fillets and let marinate 30 minutes at room temperature. Don't go longer — the acid in the lime will start to affect the texture.
- Prep the grill. Clean grates well and oil them generously — salmon skin sticks. Heat to medium-high (about 400°F).
- Grill skin-side down first. Place salmon skin-side down. Don't touch it for 4–5 minutes. It will release naturally when it's ready. If you force it up early, the skin tears and you lose the crust you built.
- Flip once. Carefully flip and cook 2–3 minutes more for medium (slightly translucent in the center). For well done, add 2 more minutes.
- Drizzle and serve. Transfer to plates and immediately spoon the remaining 2 tablespoons of verde over the top. Serve with cilantro and lime.
The Verde Herb Crust
The garlic and cilantro in verde caramelize slightly on the grill, creating a fragrant crust on the outside of the fish while the inside stays moist. It's the same principle as a chimichurri on steak — the herbs protect the protein and add a layer of flavor that the heat couldn't produce on its own.
The second hit of verde at the end is cold and bright against the warm fish. Hot and cold, cooked and fresh. It's the contrast that makes the dish work.
What to Serve With It
The verde salmon pairs naturally with rice, roasted sweet potato, or a simple green salad. If you're making our Aji Verde Corn & Avocado Salad, serve them together — the verde ties both dishes to the same flavor profile without repetition.
Tips
- Oil the grates, not just the fish. A brush dipped in oil, wiped across clean grates right before grilling, is the difference between a clean flip and a disaster.
- Skin-side down first, always. The skin acts as a barrier and basting tool. Use it.
- Don't overcook. Salmon should have give, not firmness. When it flakes when pressed gently, it's done.
