  4. Let the meat rest for 5 minutes, then slice thin against the grain.
  5. Warm the corn tortillas directly over a flame or in a dry skillet until lightly charred in spots, about 20–30 seconds per side.
  6. Build each taco: a layer of sliced meat, a generous spoonful of Aji Verde, a pinch of pickled onion, a sprinkle of cotija, and fresh cilantro.
